Don't let the name or the thought of the combination put you off. Blackbirds are lurvely!!! They're essentially eggy-bread sandwiches with the blackcurrant jam (for those of you in the US, this is jelly) being the reason they're called "Blackbirds".

You can use a different jam (jelly) if you would prefer one other than blackcurrant.

If you prefer not to use jam (jelly) for your LOs due to sugar content then you can mash down fruit to spread on the sandwiches instead. If you go down this route then I recommend bananas or strawberries... or both! Smile

What you need:
Bread
Butter
Blackcurrant Jam
(or alternative)
Eggs (approx 1 egg per sandwich)
A little oil for frying

How they're made:
Make the sandwiches by spreading butter and jam (or alternative) on the bread and cutting into desired portions sizes.

Beat the required amount of eggs in a bowl and heat some oil in a pan. Once the pan is hot, dip a piece of sandwich in the egg until completely covered and then fry until golden brown on both sides.

Serve and eat while still warm.
