What you need:
1 cup minced beef
1/2 small onion, sliced
1/2 tin tomatoes
2 tbsp tomato purée
1 courgette (zucchini), sliced
1/2 red pepper, chopped
A drizzle of olive oil
A sprinkling of oregano
Small handful of spaghetti
What you do:
In a saucepan, fry the onion in the olive oil until lightly browned. Stir in the tinned tomatoes and tomato purée until well mixed.
Add the courgette, red pepper and oregano, stir and simmer for a few minutes. Add the minced beef, cover and simmer for about half hour.
Cook the spaghetti. Pour the meat sauce over the spaghetti.
